Second is a deeper meaning. Because the owl is nocturnal, it was often thought to have access to knowledge beyond the understanding of mortals, things like occult knowledge, covert information and secrets. Because of its large eyes and head able to swivel beyond what a human can, it was thought to possess insight and divine understanding. For this reason the owl is often associated with the Goddess of Wisdom, Athena/Minerva.
It lives a solitary existence, only coming together to breed, and usually separating once the young have matured. It is an efficient hunter, and its feathers have adapted to allow the owl silent flight. It kills rodents, which often emit unearthly screeches one doesn't usually hear. It was thought the owl guarded man from monsters unseen in the night.
An owl, like many nocturnal creatures, is often associated with the moon, which has its own symbols and meanings. One of them was as it reflects the sun, it was often used to symbolize reflections of ourselves, particularly our private selves, and owls are often used to portray hunters with intelligence and wisdom gained by preying on monsters and witches that hide among the common folks during the day. An owl was thought to be able to discern between a man and a monster in human form.
Finally, the owl was the companion of the infamous witch queen Hecate, Goddess of the Underworld and the belief that the owl could come and go between the lands of the living and the dead was widespread even in cultures beyond Greek/Roman. The owl is a psychopomp, able to guide the souls of the deceased into the afterlife. It is for this reason the owl can discern between the living and the dead, for example, in the case of vampires or day walkers.
So, we have an animal that hunts silently and efficiently, lives solidarity and survives where others would fail. In folklore it kept men safe from unseen monsters in the night, monsters that hid among men in shifted form, and vampires and undead that prey on the living. It is associated with hidden knowledge, and ushers souls into the afterlife. Really there is no other animal more perfect to represent the Rangers of Everwatch, who protect men from monsters in the wild, in the darkness, and in the plain of day.
